Hosting a Dinner like an Afghan

One of my favourite things about being raised in an Afghan household, was when we hosted parties. Growing up, my mom would throw these massive food parties for all her friends. There’d be between 30 to sometimes 60 women and children in my parents Markham home almost every weekend. Several days in advance of the event, we would bake and cook everything from snacks, appetizers, desserts to several mains and sides. It was a lot of work but it was always so much fun!

Being Afghan means, hosting is a part of who I am and being prepared comes naturally. Our gatherings revolve around food and a lot of it. So when Tyler’s home and I’ll usually have friends over. I’m always excited to pull out my Afghan skills even when the guests aren’t Afghan.

This past weekend I made a chicken dinner with mash potatoes, peas, carrots and gravy. For dessert, I baked a carrot cake using a recipe from Tyler’s mom. The carrot cake was perfectly balanced and I was surprised by how well it turned out that I thought I’d share the recipe.

Carrot Cake Recipe:

  • 3 Eggs
  • 1 Cup of Oil
  • 2 Cup of Sugar
  • 2 Teaspoons of Vanilla Extract
  • 2 Cups of Flour
  • 2 Teaspoon of Cinnamon
  • 2 Teaspoons of Baking Soda
  • 1 Teaspoon of Salt
  • 2 Cups of Coconut
  • 1 Cup of Pineapple (Crushed)
  • 1 Cup of Walnuts
  • 2 Cups of Grates Carrots

Mix the first 4 ingredients together until well combined. Add the remaining ingredients slowly. Bake in the oven (350°) for an hour and half. I iced the cake with cream cheese frosting and pecans.
